Recipe Review: Black Bean Enchilada Cupcakes

I don't know about you, but I struggle with portion control.  Especially when it's a food I love, like pizza or pretty much any kind of Mexican food (damn you chips and salsa!).  I recently made White Vegetable Lasgna Cupcakes and had a bunch of wonton wrappers leftover.  After clicking around Pinterest, I came across this recipe and thought I would give it a try for Meatless Monday.



I measured out all the ingredients, so I could enter the recipe into Lose It!.  For one cupcake, it's 184 calories and 6 grams of fat.  I had two because one is just not that filling.  To be honest, I really wanted to eat more, but mangaed to resist.  I served it with a side salad with Zesty Avocado Cilantro Buttermilk Dressing

 
 
Recipe was pretty easy and quick, but clean up on the muffin tin was a bit of pain. Poor Tim. :)  Leftovers were tasty the next day, but I did find myself reaching for my afternoon snack a bit earlier than usual.  Not sure this is a regular rotation meal, but I'm sure Tim will request it in the future.
